Because cheesecake is actually a borrowed word, it’s American, and so it wouldn’t be torta di formaggio as you’d think. The reason why it would take feminine is because torta is cake and considering cheesecake is a cake, to say a cake you’d use una torta and the cake, la torta. So we have to take the feminine and apply to cheesecake.
